Haven’t had a dinner post in a while. So I thought I’d share.
Tonight the menu said Chicken skewers. I make a weekly menu and shop only ingredients and basics during our weekly grocery shop.
This week is ..
We only have chicken left in the freezer so this week is only chicken meals. Next week should be a bigger variety in meats though. Hopefully.
So as the menu says it is Tuesday .. so Skewers!
I made the skewers with chicken, obviously, red onion, red capsicum, mushrooms, and zucchini. I also made a sauce of bbq sauce, worcestershire sauce and a dash of salt and pepper. Randomly assembled the skewers. (Wet the sticks so they didn’t burn) and brushed the sauce on each side.. tossed into the oven at 180°C for about 20-30 min (depending on thickness of the chicken pieces) and brushed it with the sauce mixture every few minutes.
Made a garden salad with mixed lettuce, red onion, celery, red capsicum, tomatoes and cucumbers. Dressed it with lemon juice and balsamic vinegar. Yum! Also cooked up some corn and broccoli.
Was a hit with the whole family 🙂 my youngest cleaned her plate and climbed onto the table and tried to eat everyone else’s. Lol!
