Farmer’s Casserole

Food post tonight 🙂

A family favourite here. It’s a fun twist on breakfast for dinner. So good.

All you need is hashbrowns, shredded cheese, eggs, evaporated milk, and shredded ham.

First layer the hashbrown, I grab about 10 from the deli. Really I only need 8 but I crumb the last two over top. It all depends on the size of your casserole dish.

Then layer the shredded ham over top, about 300g worth.

Then layer the shredded cheese over top the ham, just enough to cover.

Wisk up the eggs. The recipe calls for 2 but I like having the extra egg in it so I use 6 eggs. Amd then pour in a can of evaporated milk. I also like to double up on this, makes the casserole nice and creamy.

Bake around 200°C for about 40-45 minutes. Or until the top is golden and crisp.

And then you enjoy! Yum!

Could pair it with some pancakes or bacon, grilled tomato, sauteed mushrooms. Mmm

 

Breakfast for dinner is the best.
